Heart Warming Easy Cozy Vegan Chilli
– 1 cup of kale or sub for spinach/arugula finely chopped
– 1 large onion sliced and sauteed
– 3 peeled garlic cloves diced
– 1 1/2 cups of cooked chickpeas
– 1 1/2 cups of cooked kidney beans
– 2 chopped carrots
– 3 stalks of celery
– 1/2 cup of strained tomatoes
– 8 cups of water
– 2 vegetable broth cubes
– 1 tsp of salt
– 1/4 tsp of black pepper
Optional:
– 2 tbsp of lemon juice
– 1/2 tsp of cayenne

Directions: – Sautee onions and garlic
– Add in water, broth, cooked beans, spices
– Cook for on medium 15 minutes, add in kale and celery for 10 more minutes
– Taste and add more spices to your liking

My favourite is to have it with some cassava tortilla chips and homemade guac!
