Mouth-Watering Peanut Butter Delights

Peanut Butter Delights
Ingredients: Cookies – 1 cup of oats
– 10-12 pitted dates (sweetness as desired)
– 1/2 cup of peanut butter/almond butter (creamy, natural preferred)
– 1 flax egg (1 tbsp. of ground flax + 3 tbsp. Of water)
– 1 tsp of Vanilla extract
– a dash of pink salt

Optional –> Chocolate coating
– 3 tbsp of cacao powder
– 3 tbsp Of melted cacao butter/ coconut oil (or grass-fed unsalted butter)
– 1-2 tsp Of maple syrup or honey

Directions: – Blend in the food processor
– 1st oats
– 2nd dates
– 3rd everything else until dough-like texture

– Form compact balls with an ice cream scoop or your hands (optional press down each one with a fork)
– If you’re making the chocolate coating
– mix all ingredients
– dip the cookies in halfway or all the way.
– Place on parchment paper.
– Freeze the tray for 10 min.
– Re-do the same thing fora double layer chocolate coating.

*(If you’re not using cacao butter – store in the fridge or freezer)
