Saaghi’s Healthy Persian Falafels
Saaghi’s Persian Falafels
Ingredients:
– 1 1/2 cup of cooked Chickpeas
– 3 cups of Dark Leafy Greens (Kale/ Collard Greens / Parsley / Cilantro)
– 1 large onion
– 4 Garlic Cloves
– 2 Tbsp of Tahini
– 2 Tbsp of Olive Oil
– 1/2 Tsp of ground Cumin
– 2 Tbsp of ground flaxseed
Directions:
– Blend in the food processor
– Start with the chickpeas, olive oil, tahini and spices
– Once those are finely chopped, add all the greens
– Form 2” falafel balls with hands or ice cream scoop
– Bake at 350℉ for 20 minutes then flip each falafel and bake 15-20 minutes more
– Soak 3 tbsp of Zereshk/ Barberry sprinkle on top for a sour zest! Yuuuuuuum 🙂
